We are home from a FABULOUS cruise! I would do it again and again and again!!!! It was a 4 night cruise aboard the Norwegian Sky... we left from Miami and stopped at Grand Bahama Island, where we cruised around the island in a Jeep Tour... next day we were at port in Nassau, home of the famous Atlantis. We did not visit Atlantis due to Glen's cast, however we enjoyed a lazy day shopping the straw markets and then an empty ship... pool side was great! Our last port of call was the cruise lines private island at Great Stirrup Cay... we went parasailing. That was AmAzInG!!!!! Sooooo fun! Our cruise was full of fun and sun. We enjoyed the nightly entertainment and lots of food. The food wasn't overly spectacular... I was expecting more, especially in ways of presentation. However, there was plenty and we certainly got our fill!
Now just a few more days being lazy with mom and dad.
I made this recipe today from the Bon Appetit magazine Sept 2010 issue... wanted to write it here to not forget it! Delish!!!
WATERMELON GRANITA WITH GINGERED STRAWBERRIES... Calories = 166 Fat = 0 and Fiber = 3g (if that information is important to you!) Makes 6 servings.
4 cups cubed seedless watermelon
3/4 cup sugar, divided
3 tablespoons fresh lemon juice, divided
1 tbsp mined peeled fresh ginger
4 cups quartered hulled strawberries
Puree melon, 1/4 cup sugar, 1 tbsp lemon juice, and pinch of salt in blender; pour into 8 in sq. pan. Freeze 1 hour; whisk. Freeze until solid; 3 hours. With fork, scrape into icy flakes. Cover; keep frozen.
Stir 1/2 cup sugar, 2 tbsp lemon juice, and ginger in pan over low heat until sugar melts; cool. Mix in berries. Layer berries with syrup and granita in glasses.
